In Spain, consumer preferences are shifting as whole milk gains popularity over skim milk. Discussed at FIGAN 2025 in Zaragoza, Aragón, this trend reflects changing dietary habits favoring healthy fats. Experts from organizations like Covap highlighted that nutritional awareness and quality perception are driving the resurgence of whole milk.
At the 17th International Fair for Animal Production (FIGAN 2025) in Aragón, Spain, industry leaders highlighted a significant shift in milk consumption patterns among Spanish households. For the first time in years, whole milk has overtaken skim milk in popularity, marking a notable change in dietary habits.
Spain’s Ministry of Agriculture, Fisheries and Food (MAPA) recently reported that whole milk consumption reached 73.9 million kilograms, compared to skim milk’s 59.95 million kilograms. Semi-skimmed milk still leads the market at over 111 million kilograms, but the resurgence of whole milk indicates growing consumer interest in high-fat dairy options.
Covap, a major Spanish agri-food cooperative based in Andalusia, was among the organizations represented at FIGAN 2025. Antonio Larrea, the company’s head of dairy procurement, addressed the shifting preferences: “Who would have thought three or four years ago that dairy fat would become trendy and consumed as much as it is now?”
The forum revealed that today’s consumers are prioritizing taste, value, and health benefits—especially those related to healthy fats—when making dairy choices. Ethical sourcing, animal welfare, and product quality are also influencing decisions.
The fair attracted 60,757 visitors, an 11% increase over the previous edition, signaling rising engagement with the dairy industry and consumer interest in innovative, nutrient-rich products.
As nutritional trends continue to evolve, Spain’s dairy market appears poised for further transformation, with whole milk reclaiming its place in the spotlight.
